3 cups flour
1 tsp. baking soda
1 tsp. each of cinnamon, ginger, nutmeg
2 cups sugar
1 tsp. salt
1 cup chopped nuts (optional)
3 eggs
1 1/2 cup vegetable oil
1 (8 oz.) can crushed pineapple, undrained
1 1/2 tsp. vanilla
2 cups mashed ripe bananas

Sift dry ingredients, add remaining ingredients. Stir with a wooden spoon only until well blended. Pour into two greased loaf pans and bake at 350°F for 60-80 minutes.

OMG... How many banana breads have I made and they were DRY! This recipe is the best tasting, moist banana bread in the WORLD!!!!
