2 eggs
1 oz fine herbs
3 oz milk
ground nutmeg, salt, pepper as needed
6 oz flour

Directions:
Directions:
Combine eggs, milk, salt, pepper, nutmeg and herbs in a lg bowl.
Mix well.
Work in the flour by hand.
Let the dough rest for 10 minutes and set a large pot of water to boil. Using a spatzie machine, or perforated pan, drop the dough into a large pot of boiling salted water.
Simmer until done, about 5-6 minutes, and remove with a spider or slotted spoon.
The spatzie is ready to finish or they may be cooled in ice water, drained and refrigerated.
Reheat the spatzie in hot butter in a sauce pan and serve with accompaniments.
