1 T yeast
1 T sugar
2 1/2 cups warm water
6 cups flour
11/2 tsp.salt
1 tsp chopped garlic
1 tsp chopped rosemary or Italian seasoning
2 T olive oil plus 1/2 cup more oiling bowl and top of bread
1 sliced onion and 1 T garlic
3/4 cup Parmigiana

Mix yeast, sugar and 3/4 cup warm water into measuring cup and let sit for 5 minutes.
Pour into large mixing bowl and add salt, oil, remaining water, Italian seasoning and flour.
Mix well until dough ball forms. Kneed dough on a floured surface for 10 minutes. Place dough back in oiled bowl (covered) and let rise for 2 hours or overnight in fridge.
Once dough has risen cut in 1/2 and stretch it onto two 1/2 sheet pans. Topping Place 1/2 cup oil, garlic and sliced onions in a microwave safe bowl and heat on very low setting for a few minutes. (Infusing the oil) Rub 1/2 of the mixture on each loaf. Cover with parmigiana and bake for 25 minutes at 425 degrees

Sliced tomatoes, hot peppers, spinach and olives also are great toppings. Serve with your favorite marinara sauce. Tip: Dough can be made in the kitchenaid with the dough hook.
