2 carrots, thin strips
2 onions, thin strips
1 bell pepper, thin strips
4 cups cabbage cut roughly into 2 inch by 2 inch squares
Soba noodles or Ramen noodles
Ginger flavored soy sauce
Option: chicken or shrimp in bite size pieces

Directions:
In a medium high preheated large wok or frying pan, add a few tablespoons of oil. Stir fry carrots, onions, peppers until tender, but crisp. Add cabbage and fry till cabbage is tender but crisp. Remove to warming dish. Cook Soba noodles or Ramen noodles according to package directions. Drain and toss lightly with oil. Add 2 Tbsp. oil to wok/fry pan and stir fry lightly. Shake a few splashes of ginger flavored soy sauce onto noodles. Add vegetables to noodles and mix well. Keep frying a while till you get a few dark spots on vegetables and noodles. Add a few more splashes of ginger soy sauce. Place on plates. Each person can add a little more ginger soy sauce if they like. We always preferred this as a vegan dish, but you can stir fry chicken or shrimp in bite size pieces and add to this as well.
