Daddy’s Hit-and-Miss Fudge Recipe

3 C Sugar
2/3 C Cocoa
¼ tsp salt
1 ½ C milk
¼ C Butter
1 tsp vanilla
Pecans if available.

Butter an 8 or 9 inch pan. In a heavy 4 quart sauce pan, combine sugar, cocoa and salt. Stir in milk and cook over medium heat, stirring constantly until mixture comes to a full rolling boil. (Daddy’s trick, butter the sides of the sauce pan and the fudge will not boil over). Boil to soft-ball state (234 degrees) and remove from heat. Add butter and vanilla and slightly cool. Beat with wooden spoon until fudge thickens and loses some of its gloss. Add pecans and quickly spread into prepared pan. Cool and cut into squares.

Daddy made fudge for his brother and sisters when they were growing up on the farm in Rhineland. As we grew up, many years later, Daddy’s fudge was a treat for us! Sometimes it was smooth and other times it was grainy, but always made with love and it didn’t last long!
