1 ½ tsp Basil Leaves
1 ½ tsp Garlic Powder
1 tsp Rosemary
3 TBS Flour
1 ½ pounds boneless chicken cutlets (the thinner the better)
3 TBS Olive Oil
1 small onion, diced
1 can petite diced tomatoes, drained
1 ½ cups Chicken Stock
2 TBS Milk or half and half

Directions:
Directions:
In a bowl mix basil, garlic, rosemary and flour. Coat the chicken in this mix.
Heat olive oil in a large skillet on Medium Heat. Add chicken in batches and cook through until browned, add more oil as needed. Remove cooked chicken from skillet and keep warm while you cook the rest of the chicken.

In the same skillet you cooked the chicken in, heat tablespoon of oil and cook the onion about 3 minutes. Stir in 1 TBS flour, add drained tomatoes, chicken stock and more basil, garlic and rosemary. Bring to a boil. Reduce heat to med/low and simmer for 5 minutes. Stir in milk or half and half. Return chicken to the skillet and simmer until heated thru.
