8 cups of cooked white rice
2 cans of black beans
1 red onion
Caribbean seasoning ( emeril )
1 jar of salsa
1 pork tenderloin (total weight I pound)
Hot sauce
Olive oil

Directions:
Directions:
Put black beans in sauce pan and season to taste with hot sauce. Cook onions in olive oil until soft. Cut pork into bite size pieces. Put in pan with onions and season with Caribbean seasoning. Cook until no longer pink. In a deep casserole pan- put cooked rice on the bottom. Drain some of the juice from the beans and then layer the beans next. Next put the pork on top scrapping the onions. Cover and bake at 350 degrees for 1/2 hour to warm through.
When ready to serve- top with salsa. Serve with hot sauce.
