2 lbs. new potatoes, boiled in salted water
6 strips bacon
1 onion, chopped
1/2 cup green onion- chopped
2 tsp. flour
1 1/2 T sugar
2 1/2 tsp. salt
1 tsp. pepper
1/4 cup white wine vinegar
1/4 stick butter
1/2 cup parsley, chopped

Directions:
Directions:
Fry bacon until crisp. Chop into very small pieces or crush. Set aside. In bacon drippings, saute' onion and green onions until soft. Stir in flour, sugar, salt and pepper. Simmer for 5 minutes, stirring to mix. Stir in vinegar and taste for seasoning. Set aside. Peel and cube the potatoes. Add butter.Pour the hot mixture over the potatoes. Add bacon and parsley. Toss lightly. Serve warm.

Mike loved this potato salad. He found it in the original Ralph and Kacoo's cookbook. Ralph and Kacoo's was a restaurant in New Orleans.
He was a fan of A-my's traditional potato salad as well but made this one often.
