1 Lb. diced /cubed raw chicken breast
1 C. thin sliced carrots
1 C. sliced green and yellow squash
1 C. mushroom slics.
1 C. broccoli
1 C. Catalina Dressing
1/4 C. Soy Sauce
1/2 tsp. Garlic salt

Directions:
Directions:
Sprinkle EVOO in a wok and cook the chicken until done, approx 8 minutes. Remove from wok. Add to the wok the Catalina dressing, soy sauce, and garlic salt. add carrots and cook 5 minutes, when tender add the rest of the vegetables, saute until tender, add the chicken back in and simmer a few more minutes.
The original recipe is to serve over rice. I just discoverd Spaghetti squash and tried it with this dish. it was Fabulous. The squash absorbed the Catalina flavor.

Feel free to change up the veggie combination.

Every time I make Catalina Chicken I am taken back to Mt. Dora FL. This was the dish they were cooking up during a demonstration at the Publix grocery store. Dwight and I could not believe how good it tasted and how easy it was to cook up in a short time.
