1 lb elbow macaroni
1 lb. block cheddar cheese grated
3 tbs. butter
1 tbs. mustard
3 c. milk
1 small onion
1/2 tsp. paprika
1 egg
1 tsp. salt
bread crumbs (optional)
tomatoes (optional)

Directions:
Directions:
Preheat oven to 350º F.

Place macaroni in water and boil.

Place butter into the pot until melted. Mix in flour and mustard. Then mix in the milk, onion, and paprika. Let onion cook slightly so the flavor gets into the mix.

Add egg, 3/4 of the grated cheese, salt, and pepper. Add the cheese slowly to help coax it into melting. Putting it at a low heat and covering the mix also helps.

Once the noodles are cooked 3/4 of he way, strain them and place them in a glass casserole dish. Pour the cheese mix overtop. Take the remaining 1/4 of the cheese and sprinkle it along the top of the mix.

OPTIONAL You can also sprinkle bread crumbs on top. I have even used stuffing mix with great success. Slice tomatoes and scatter them across the top for a deliciously fresh flavor to the otherwise heavy dish.

Bake for 25-40 minutes (depending on the dish).
