1 box Golden Curry© Sauce mix (3.5 oz)
2 chicken breasts
coconut oil
lemon juice
1/2 can coconut milk
1/2 onion
2 roman tomatoes
1/2 green pepper
3 carrots
2 1/2 c. water
rice

Directions:
Directions:
Prepare rice during or beforehand. I use a rice cooker so I put it on beforehand.

Cut chicken into cubes and place in a pot with coconut oil and lemon juice. Add onions, green pepper, carrots and stir until slightly seared.

Add water and bring to a boil. Add coconut milk and tomatoes then let it simmer. (The box says 10 minutes, but it depends on how cooked/tender you want your chicken).

Remove from heat and break S&B Golden Curry© into pieces and add them to the mix. Stir until completely melted and simmer for 5 minutes.

Serve hot over rice.

Authentic rices such as Jasmine rice or Lotus rice taste the best, but you can still use plane white rice and add a tbs. of coconut milk in to add flavor.

Curry is very much a kitchen-sink type recipe, so once you get an idea for what it taste like you can put any vegetables you want. Lemon grass is a great additional ingredient.
