PEANUT BUTTER FUDGE:
2 C. Sugar, 1/2 C. Peanut Butter,
2T. evaporated Milk, 1 tsp. Vanilla,
2 T. Water, 1 tsp. Butter.

Mix sugar, milk & water in a pan. Cook slowly, stirring occasionally to
236º F, or until a soft ball forms in water. Remove from heat & cool at room temperature until lukewarm or until hand can be held comfortably on bottom of pan. Add peanut butter, vanilla & butter. Beat until smooth, then pour in to buttered pan & cut in to squares.

FAST CHOCOLATE FUDGE:
2 C. Sugar, 2/3 C. evaporated Milk, 1/2 C. Butter, 12 lg. Marshmallows, few grains Salt, 1 (6 oz) pkg. semisweet Chocolate morsels, 1 C. chopped Pecans (optional), 1 tsp. Vanilla extract.

Combine first 5 ingredients in a large saucepan. Cook over medium heat until mixture comes to a boil, stirring gently; boil 5 min., stirring constantly. Remove from heat. Add chocolate morsels to marshmallow mixture, stirring until melted. Add pecans & vanilla, stirring well. Spread evenly in a buttered 8" square pan. Cool & cut into squares. Yield: 2 pounds.
