1 large or 2 medium potatoes, peeled and diced
1 cup diced ham with 2 T oil (or 3-4 slices thick-cut bacon cut in pieces, no oil needed)
1/2 medium bell pepper, chopped
1/2 medium yellow onion, chopped
1/2 bunch cilantro
2 cloves of garlic; garlic
1 envelope Sazon
1 can tomato sauce
1 tsp salt (or salt to taste)
1/2 tsp black pepper
2 cans beans
1-2 cups water

To Cook:

Put potatoes in a small saucepan with just enough water to cover; add salt. Cook 15 minutes then drain.
Saute the ham or bacon in a saucepan until crispy.
Cook the onion and pepper with the ham or bacon until tender (about 8 minutes).
Add the garlic and cook 2 more minutes.
Add the cilantro and cook 2 more minutes.
Add salt and pepper, and then the tomato sauce and Sazon - this is your sofrito mix.
In a pot, combine: the sofrito, potatoes, beans and 1-2 cups of water depending on how thick you like the sauce.
Cook until hot and bubbly making sure the potatoes are tender. About 15 minutes.

I prefer to use a red bell pepper but you can use any color.
I do not drain my beans but many people do. If you do, you'll need more water.
