1 lb Jalapeños
½ lb Green Tomatillo
½ Head Garlic
1 T. Cumin
10 lbs Chicken
1 T Salt

Directions:
Directions:
Cook chicken with salt, cumin, and 3 cloves garlic. Cook for 1 hour. Shred chicken after cooking.

Bring the jalapeños to a boil and remove the chili heads when soft. In a saucepan filled with water, bring tomatillo to a boil until soft (about ½ hour). Blend chili, salt, 2 cloves garlic, tomatillo and water to make chili sauce. Strain sauce and begin a slow boil in a saucepan until all the chili is blended. Add shredded chicken to chili sauce and bring to a boil.
