To prepare chicken:
4 or 5 chicken breasts
1 medium onion
Celery tops reserved from chopped celery (see below)
1/2 tsp. each salt and pepper, garlic salt and Lawry's Seasoned Salt.
Water to cover chicken

Remaining salad ingredients:
2 cups chopped celery
1-1/2 cups sugared sliced almonds
1-1/2 cups seedless red grapes
1 cup pineapple tidbits
1-1/2 cup thinly sliced apple pieces

Dressing:
1/2 cup mayonnaise
2 cups heavy cream, whipped
1 cup chicken broth, saved from chicken and cooled

Directions:
Directions:
Simmer chicken breasts in water to cover with celery tops and added seasonings. When tender, remove breasts from broth, cool, remove skins and shred chicken.
Place in large bowl and add celery, almonds, grapes pineapple and apples. Combine dressing ingredients and gently fold into other salad ingredients. Serve on croissants or a bed of lettuce. Shredding the chicken and using this unique dressing make all the difference.

This is my favorite ever chicken salad recipe. It came from my dear friend and fellow Simada Study Group member, Jane Wright, and was served at many "Nutcracker Teas" when my granddaughter, Lauren, was the prima ballerina in our family.
