3/4 c. sifted flour
4 tbsp. cocoa
1/4 tsp. salt
3/4 tsp. cream of tartar
1 1/4 c. sifted granulated sugar
3/5 tsp. vanilla
1/4 tsp. almond extract

Directions:
Directions:
Sift flour once and then measure. Add cocoa; sift 4 times. Beat egg whites and salt in large bowl with flat wire whisk. When foamy, add cream of tartar. Continue beating until eggs are stiff enough to hold up in peaks, but not dry. Fold in vanilla. Fold in flour mixture, 2 tbsp. at a time. Pour batter into ungreased angel food pan. Bake in slow oven (275º F). After 30 minutes, increase heat slightly to 325º F. Bake for at least 1 hour. Remove from oven and invert pan for 1 hour, until cool.
