"A man who was fond of wine was offered some grapes at dessert after dinner. "Much obliged," said he, pushing the plate aside; "I am not accustomed to take my wine in pills."--Jean Antheleme Brillat-Savarin, The Physiology of Taste

3 cups sugar 1 1/2 cups carnation evaporated milk 1/2 cup water 1 cup chopped nuts 1 tsp. vanilla or almond flavor

Directions:
Combine 1 1/2 cups carnation evaporated milk and 1/2 cup water in small saucepan. Warm and set aside. In another saucepan (3 qt. size) put 1 cup sugar and melt or caramel to very light brown. When melted, slowly add warm milk stirring all the while. Caramel might ball up- just continue to heat until about dissolved. Add two more cups sugar and stir well. Cook at high heat watching carefully. Stir only enough to keep from boiling over or sticking in bottom of pan. (too much stirring causes it to be less creamy and more granular) As mixture begins to thicken and decrease in pan, begin testing for doneness by dropping small amounts in a cup of tap water. When a soft ball forms (one that can be picked up between fingers) then it is done. Remove from heat and begin to stir. When mixture thickens but is still at pouring consistency add flavor and chopped nuts. Mix and pour quickly into q buttered shallow platter. Cut into squares after candy begins to cool. Use a knife thaqt has bee heated under hot running water. (Enjoy)
