6 (1-inch pork chops) center cut
3/4 tsp. salt
1/2 tsp. black pepper
1/2 to 1 cup dry pancake mix
vegetable oil
3 yellow onions, sliced

Gravy:
3/4 tsp. salt
1/4 tsp. black pepper
1 tbsp. sugar
1/4 cup all-purpose flour
2 cups boiling water

Directions:
Directions:
Season pork chops with salt and pepper, coat with pancake mix and brown in hot oil. Place in a 9x13" dish or roasting pan. Saute onion in the same skillet, adding more oil if needed. When tender, remove to roasting pan.

In the same skillet used for the chops, stir in salt, pepper, sugar and flour. Cook and stir carefully to make a roux. When smooth, add boiling water. Cook and stir until slightly thickened. Pour gravy over chops and onions. Cover and bake in preheated oven at 350º for 1 hour and 20 minutes. Skim off any excess fat and serve.

This recipe comes from Arlene Lightsey, who owned the old "Post Office Café" in Comfort, Texas. She submitted many of her recipes to the San Antonio Express News to publish in the food section. She published several cookbooks, and this pork chop recipe was one of my favorites.
