3 c water
4 c granulated sugar
5 c whole nuts (almonds work great)

Directions:
Directions:
Place all ingredients in heavy pan over medium high heat and bring to a boil. After the nuts have been boiling for awhile, the water will eventually evaporate and the mixture will come back to a dry caramel colored mixture. Keep the heat on ans stir constantly, the mixture will then start to melt and will coat the nuts - you don't want to take it off the heat until all the nuts are coated, ans the mixture is liquid.

Immediately pour nuts onto a cold surface covered with foil. You will need to separate the nuts. They will dry to a crisp candy coat.

There are three options at this point.

1. Eat as is

2. Refrigerate until really cold - melt some chocolate in double boiler - add cold nuts and stir vigorously, the cold nuts will start to harden the chocolate. Then add powered sugar - still stirring - until the nuts have been coated - the powered sugar will help to separate the nuts. It helps if you have someone add the powered sugar while you stir.

3. The same as above but substitute cocoa powder for the powdered sugar.

If you make all three - It looks really great to put them lined up in a tin --- Presto - Great Gift!
