1½ c. butter
1 c. sugar
2 eggs
1 ½ c. ripe banana, mashed
1 T. lemon juice
2 c. all purpose flour, unsifted
1 T. baking soda
½ tsp. salt
½ T. cinnamon
½ T. grated lemon rind
1/4 c. chopped nuts

Directions:
Directions:
Preheated oven to 350º. Cream butter and sugar in a medium size mixing bowl until fluffy. In a separate bowl, beat and add eggs one at a time to mixture. Stir in bananas and lemon juice. Add flour, soda, salt, cinnamon and lemon rind; stir in nuts. Pour into a lightly greased floured loaf pan. Bake 55 minutes or bake in a muffin tin for 15-20 minutes.
