BREAKFAST SOUFFLE:
1 lb. hot Sausage, 9 Eggs,
4 slices Bread/cubed, 3 C. Milk,
1 1/2 C. shredded Cheese, 1 1/2 T. dry Mustard,
1 tsp. Salt.

Brown sausage. Combine everything. Let stand overnight in the refrigerator. Bake 1 hour. at 350.

CHEESE GRITS:
4 1/2 C. boiling Water, 1 C. Grits, 1/2 lb. Cheddar Cheese, 2 Eggs, 1 stick + 2 T. Margarine, dash Pepper, 1 tsp. Salt, 1 T. Tabasco sauce, 2/3 C. Milk, Garlic powder to taste, Paprika. Boil water w/salt, pepper & tobacco sauce.. Add grits & stir with a wire whisk until thick, letting mixture bubble for about 5 min. Stir in 1 stick margarine & cheese, then garlic powder. Turn heat down. Beat eggs & milk together. Add to grits & remove from heat. Pour into sprayed 1 1/2 qt. casserole. Dot w/2 T. margarine & sprinkle w/paprika. Bake at 350 for 1 hr.
