1 2-3 lb pork butt
1 tbsp crushed garlic
1 tbsp olive oil
3 jars or packages saurerkraut (do not use canned if possible)
Salt and pepper to taste

Directions:
Directions:
Heat oil in large dutch oven or ovenproof pot. Sprinkle meat with salt and pepper, and rub with garlic. Brown on all sides. Remove from heat and add sauerkraut. Cover and roast in 300 degree oven for approximately 4 hours, or until meat is very tender. Serve with mashed potatoes, noodles or spatzel.
