2 pork chops, 1" thick
salt and pepper
1 T oil
3 T butter
1/2 ts. brown sugar
1/2 ts. cinnamon
1/4 ts. nutmeg
1 small sweet onion sliced thin
2 apples sliced
1 c. white wine or sherry

Directions:
Directions:
Heat oven to 325º. Place baking dish in the oven. Mix the sugar, cinnamon and nutmeg. In a 14" skillet heat oil and melt the butter. Add the sugar mixture. Salt and pepper the chops. Brown chops in the sugar mixture in the skillet for approximatly 2 min per side. Transfer to the baking dish in the oven. Add the apples and onions to the skillet and caramelize. Add the wine and cook until reduced and becomes a light syrup. Check chops to make sure they are 145º. Remove to serving plate and top with the onion apple mixture.
