CARAMEL TOPPING:
1 cup sugar
4 Tbsp water

CUSTARD:
4 cups milk
8 eggs
1/2 cup sugar
1/8 tsp salt
1 tsp vanilla

Directions:
1. For caramel topping - heat sugar and water in a skillet stirring constantly until sugar melts and turns golden. It will completely harden before it starts to caramelize - don't let it burn.

2. Pour caramel into a molded metal dish or into custard cups - Swirl caramel around bottom and sides until completely covered. USE GLOVES - pan will get very HOT.

3. FOR CUSTARD - Scald milk - don't boil. Heat just until white film develops and it starts to bubble around rim.

4. In a separate bowl - beat eggs, beat in sugar, salt and vanilla. I use a whisk. Gradually beat in scalded milk a little at a time - you don't want to cook the egg mixture.

5. Strain mixture into caramel covered dish or custard cups. If there is any foam on the top - remove it with a spoon.

6. Place dish or custard cups into a square aluminum pan - fill pan with water at least 1-2 inches high.

7. Bake 325° - 45 minutes for custard cups - 1-1/2 hours for dish

8. Remove from oven and completely cool down - refrigerate overnight.

9. When ready to serve - loosen sides with butter knife or spatula - place large plate over dish - invert quickly - shake mold until you hear flan dislocate from mold.
