PUFFS:
1 cup water
1/2 cup butter (1 stick)
1 cup flour with 1/2 tsp salt (sift together)
4 eggs

FILLING:
1 small package instant french vanilla pudding
16 oz light whipping cream
(prepare according to package and refrigerate while puffs are in the oven)

PREHEAT OVEN TO 450°

Bring water and butter to a boil. Add flour and salt all at once until dough comes clean from the pot. Remove from heat. Add one egg at a time mixing each egg very well.

Spray cookie sheet with non-stick spray and drop dough by the teaspoons onto cookie sheet. Leave a little room because puffs will grow. Bake at 450° for 10 minutes then reduce oven to 400° and bake for 20 minutes. Let cool.

Once puffs are cool - make a slit in the middle and fill with the pudding. Sprinkle with powered sugar.

(optional) drizzle with chocolate or butterscotch
(optional) use different flavor puddings for the filling
