no-stick cooking spray
1 cup frozen (loose) spinach, chopped
1 40 oz can (or 3 15 oz cans) canned beef ravioli
1 15 oz can of diced tomatoes, well drained
1 1/2 teaspoon Italian seasoning
1/2 teaspoon black pepper
1 cup cottage cheese
1 cup Italian cheese blend, shredded

Preheat oven to 350º. Spray 8X8 pan with non-stick spray. Place spinach on microwave safe dish and cover, cooking on high for 2 minutes. Combine ravioli, tomatoes, and seasoning in microwave safe bowl, cover, and cook on high for 4 minutes. Combine cottage cheese and pepper with spinach. Place 1/2 ravioli mixture in bottom of pan. Top with 1/2 of the spinach mixture. Top with 1/2 cup of shredded cheese. Repeat the three layers. Bake 15 minutes or until hot.
