2-3 bunches of lacinato kale
1-2 T. Extra virgin olive oil
Sea salt
Garlic salt
If eating immediately add a little freshly grated parmesan cheese!

Preheat convection oven to 300 degrees. Soak, clean and tear kale into 1-2" pieces. Spin very very dry in salad spinner. Place on a cotton towel and dry some more with another towel. When you don't see any more moisture, place kale into a large bowl. Add olive oil and toss with your fingers to rub oil on all kale. Transfer to a large sheet pan lined with foil(you may need two or three large sheet pans) kale should be only one layer deep and donot crowd. Place in oven and bake for about 12 minutes until kale is crisp but not browned (browning with make the kale bitter) rotate pans and turn as needed for even drying. Remove from oven and immediately sprinkle with garlic salt and sea salt to taste.
