2 T olive oil, divided
1 t garlic cloves
1/4 to 1/2 C chopped onions
1 Green Pepper, slice 1 inch long
4 Chicken breasts, cut into cubes
Uncle Bens Rice
Salt & Pepper
2 C Carrots 1 inch pieces
2 C Celery 1 inch pieces
2 T Cornstarch
1 1/2 C Water
3 T Soy Sauce
3 T Teriyaki Sauce
2 T Brown Sugar
1/4 t ginger

Directions:
Directions:
Fix Uncle Ben's rice according to directions. While rice is cooking, heat 1 T olive oil. Add cloves, green peppers & onions. Stir fry for 2 min. Remove onion and green peppers and put to side. Add chicken to oil in skillet and stir fry. 10 min till pink is gone. Salt & pepper to taste. Remove chicken and put to side. Add 1 T olive oil to pan. Add carrots & celery. Stir fry 10 to 15 min. Add 1 C water to vegetables. Mix 2 T cornstarch, 1/2 C water, soy sauce, teriyaki sauce and brown sugar together. Add to vegetables. Add green peppers & onions. and ginger. Cover and cook till vegetables are tender. Add chicken and heat. Add more water if desired or additional soy and teriyaki to taste.
