1 - 3 1/2 lb chicken
1 T Canola Oil
1/8 t salt
1/8 t pepper
6 Carrots cut 1 inch
4 Celery cut 1 inch
4 Potatoes Cut 1 inch pcs
1 Med Onions, cut into wedges
2 T Melted Butter
1/2 t thyme
Salt & Pepper

Directions:
Directions:
Place chicken, breast up in shallow roasting pan. Rub with oil, sprinkle with salt & pepper. Bake at 375 degrees for 45 min.
Add carrots, celery, potatoes & onions. Combine butter & thyme and drizzle over chicken and veggies. Salt & Pepper. Cover and bake 45 to 60 min or till meat thermometer equals 180 degrees.
