2 cups sugar
2 cups flour
1 tsp. salt
2 tsp. cinnamon
3 eggs
2 tsp. baking soda
2 tsp. vanilla
1 1/2 cups oil
3 cups grated carrots
1 cup walnuts

Carrot Cake Frosting:
1 lb. box powdered sugar
1 stick oleo
1 8 oz. pkg. cream cheese
4-6 tbsp.milk

Directions:
Directions:
Combine sugar, flour, salt, cinnamon, baking soda, eggs, vanilla and oil in a large mixing bowl. Blend until thoroughly mixed. Add grated carrots and walnuts. Blend together. Pour into greased and floured 9"x13" cake pan or two 9" layer pans. Bake for 45-50 minutes for 9"x 13" pan or 20-25 minutes for 9" layer pans.

Frosting:
Blend powdered sugar,softened oleo, softened cream cheese in a bowl. Add milk and blend. For a thinner consistency add more milk. Spread over completely cooled cake.
