1 lb. butter
2/3 c. sugar
1 T. vanilla
4 c. pecans, ground finely
4 c. sifted cake flour
2 lbs. powdered sugar

Directions:
Directions:
Beat butter until soft. Add sugar and blend until creamy. Add vanilla. Stir pecans into the butter mixture, add flour. Place in large mixing bowl, cover with plastic and refrigerator overnight. In the morning, remove a small amount of dough from the bowl and return bowl to refrigerator to keep remaining dough COLD. Roll into round balls and place on greased cookie sheet. Put in oven and bake at 300 degrees for 45 min. Repeat this process until all dough is used. When the cookies are baked, roll in powdered sugar while still warm. Cool, then roll in powdered sugar again.
