DRESSING
6 anchovies
8 oz white wine vinegar
3/4 tsp dried oregano
1 1/2 tsp pepper
1 tbsp salt
2 tbsp white sugar
1/4 cup corn starch
16 oz canola oil

SALAD
6 cups romaine lettuce cut into bite sized pieces
1 red pepper chopped
1 bunch green onions chopped
2 tbsp grated parmesan cheese
2 tbsp grated romano cheese
2 tbsp shredded provolone cheese
2 tbsp shredded mozzarella cheese
1/2 cup croutons

Directions:
Directions:
Combine all DRESSING ingredients except oil in a blender and mix well. Slowing wile blender is processing on medium speed, drizzle in oil. Mix until thick and creamy.
Dressing can be stored in air tight container in the refrigerator for up to two weeks.

To make salad. Combine lettuce, red pepper and onion. Toss with dressing (amount depending on how heavy you like it). Toss in cheese and croutons.

This is supposed to be the original recipe from the Casa Restaurant. I am not sure it is exact... but it is pretty close.
