2 C minute rice
2 C water
1 1/2 Sticks margarine
2 bags thawed chopped broccoli
16 Oz Velveeta Cheese
2 Cans cream of mushroom soup

If adding chicken, boil a cut up chicken for 1 hour. Add celery and onion and parsley to water. Remove chicken and save broth for another recipe.

Preheat oven to 325 degrees. Makes 9 X 13 dish.
Bring water to a boil in a pot. Add rice and margarine. Put lid on and remove from burner. Set aside for 5 minutes.
In another pot, add cream of mushroom, diced up velveeta cheese and heat to melt cheese. Add rice to mixture. If adding chicken, place chicken pieces into baking dish then add broccoli and then rice mixture. If adding chicken may want to add 1/2 Cup chicken broth more or less.
Pour into the 9 X 13 dish. Bake for one hour.
