4 eggs
1 1/2 c. oil
2 tsp. vanilla
3 1/2 c. packed grated carrots
2 cups sugar
2 1/4 c. flour
1 T. cinnamon
2 tsp. baking soda
1 tsp. baking powder
1 tsp. salt

Directions:
Directions:
Mix eggs, oil, vanilla, and carrots. DO NOT over mix! Sift the next 6 ingredients together. Add to carrot mixture. Mix gently.

Pour into 3 greased 8" layer cake pans. Bake @ 335º for 30 to 40 minutes.

When in doubt...underbake. Double basic recipe to make a 1/2 sheet cake. This is amazing with cream cheese frosting.
