1 box Duncan Hines Yellow Deluxe cake mix
4 eggs separated
3/4 c. vegetable oil
3/4 c. apricot nectar

Glaze
2 lemons, juice and zest
2c. powdered sugar

Directions:
Directions:
Mix together cake mix, egg yolks, oil and nectar.
Beat on low for 2 minutes and then 5 minutes on high.
Fold in beaten egg whites.
Put in greased & floured tube pan.
Cook for 1 hour at 325º.
While cake is baking, mix lemon juice with powdered sugar.
Pour glaze over cake while in pan.

This cake was my specialty as a little girl. Most every Saturday morning I would bake this cake for the family. My mother and I were featured in the local Jackson newspaper for our baking skills.
