1 pound ground beef
1/2 chopped onion
1 envelope (1 1/4 oz) taco seasoning mix
1 can (4 oz.) chopped green chilies, drained well
2 c. milk
1 1/3 C. Bisquick
4 eggs
2 tomatoes chopped
1 C. shredded cheddar cheese

Directions:

Heat oven to 400º
Lightly grease a 10 inch pie pan.
Cook the ground beef and onion in a skillet, drain the meat, and then add the taco seasoning packet. Spread the mixture in the pie plate, sprinkle with chilies, and some of the cheddar cheese.
Beat the milk, eggs, and Bisquick in a blender for 15 seconds on high.
Pour it into the plate on top of the meat mixture. Bake 35 minutes or until knife inserted in the center comes out clean. Sprinkle the remainder of the cheddar cheese on top of the pie, and return it to the oven for about 10 minutes or until cheese is melted and golden brown. Remove from the oven and let it cool for about 15 minutes, and then cut in slices. Serve with diced tomatoes, shredded lettuce, sour cream, taco sauce, and extra cheese if you would like.

This recipe was found in my mother's recipe box, and was written in my sister Ginnie's handwriting. It is a quick and tasty dish. I have thought of adding chili beans to the meat mixture, but have not tried it!
