3 c. finely chopped white onion
2 c. finely chopped celery
1 c. finely chopped green onions
1 c. finely chopped lettuce
16 oz. Creole Mustard or brown mustard
1 1/2 pints Olive oil
1/4 cup fresh lemon juice
Generous amount of paprika for color

Directions:
Directions:
Mix all chopped vegetables together.
Add Creole mustard and mix well.
Add paprika, olive oil with salt and pepper to taste.
Makes about 2 quarts of sauce.
Sauce can be made in advance and will keep for several days.

Serve with boiled, chilled shrimp or fried green tomatoes....or both!

When Reeves and I went to New Orleans to celebrate Christmas one year, we at at Tujague's Papa Noel festival dinner. The Shrimp Remoulade was divine and I talked the waiter into giving me the recipe! It was a Merry Christmas indeed!
