1 1/2 c. self-rising corn meal
3/4 c. finely chopped onion
2 eggs
8 oz. sour cream
1 -8oz. can cream style, white corn
3 -4 fresh jalapeno peppers, thinly sliced

Directions:

Mix all ingredients well.
Heat a 10" iron skillet in a 400º oven until hot. Put 1 T oil in skilet until heated.
Pour hot oil into cornbread and stir quickly.
Pour batter into skillet.
Top with slices of jalapeno pepper.
Bake 20 minutes or until brown.

This most fabulous cornbread recipe was given to me by my sister Patsy. I don't know who Mary Dicken is....but she makes great cornbread!!! This has become my favorite!
