1 - pie crust
3 1/2 pounds of peaches, pitted and sliced(about 7 cups)
3/4 cup packed light brown sugar
1/2 tsp. ground cinnamon
1/4 tsp. ground ginger
1 1/2 T. cornstarch
1 tsp. vanilla extract
Topping:
2/3 cups rolled oats
1/4 cup all-purpose flour
1/2 cup packed light brown sugar
1/4 teaspoon salt
2 T. unsalted butter, melted
1 T. lemon juice
1 tsp. water

Directions:
Directions:
Preheat oven to 375º. To prepare the filling, in a medium bowl, combine the peaches, brown sugar, cinnamon, ginger, cornstarch, and vanilla extract; toss well. Transfer to the pie shell.
To prepare the topping, in a medium bowl, combine the oats, flour, brown sugar, and salt. Add the butter, lemon juice, and water; stir to combine. Press the topping mixture together to form clumps, then break them into smaller pieces over the filling.
