1 tbsp. Thai red curry paste
3/4 cup coconut milk
1 tbsp. sesame oil
1/2 cup honey
2 tbsp. seasoned rice vinegar
1 1/2 tsp. lemon juice
1/4 cup roasted salted peanuts, finely chopped
1 tbsp. cilantro for garnish, finely chopped

Directions:
Heat curry paste and coconut milk in a saucepan over medium heat, stirring often for 3 mins. Reduce heat and whisk in oil, honey and vinegar until smooth. Remove from heat. Stir in peanuts and garnish with cilantro. Serve warm or at room temperature with pita chips.
