1 (12 oz) package vanilla wafers
2 (8 oz) packages cream cheese
3/4 cup sugar
1 tsp. vanilla extract
2 eggs
1 (21 oz) can cherry pie filling
Directions:
Directions:
Preheat oven to 350º. Line mini muffin tins with mini paper liners. Crush the vanilla wafers and place 1/2 tsp. of the crushed vanilla wafers into each cup.
In a mixing bowl, beat cream cheese, sugar, eggs and vanilla until light and fluffy. Fill each mini muffin liner with this mixture, almost to the top.
Bake for 15 minutes and let cool. Top each cheesecake with 1 tsp. of cherry pie filling.
