1 1/2 cups 100% whole wheat pastry flour
1/2 cup low fat cottage cheese
4 1/2 tbsp. unsalted butter
heaping 1/4 tsp. salt
2 packets Stevia

Filling:
5-6 med. peaches, diced
13 packets Stevia
2 tbsp. water
2 tbsp. raw honey
2 tbsp. cornstarch dissolved into 1 tbsp. water

Preheat oven 475º. Combine flour and salt in a medium bowl. Using a fork, cut the butter into the flour mixture until it looks like coarse flour. Mix in the cottage cheese using the same method. Using wax paper, form the mix together into a ball, and set 1/3 of the dough aside. Put the mixture into a greased 9-.5" pie dish and press the dough around until it is molded into a pie crust shape. Sprinkle the Stevia on the top of the dough. Bake for 5 min., set aside and reduce oven temp. to 350º. In a sauce pan over med. heat, mix peaches, water and 10 packets Stevia until the peaches break down ( the water will turn pinkish orange). Add water to cornstarch in a separate bowl and mix until dissolved. Add the cornstarch mixture to peaches and stir until the filling becomes thick. Pour the filling into the pie crust and spread evenly. Roll out the remaining pie crust and cut out shapes. Place on baking sheet lined with parchment paper and bake at 350º for 5 min. Sprinkle 2 packets of Stevia over pie filling and top with baked pie crust shapes in any design you wish. Bake for 10-12 mins. or until the crust turns slightly brown.
Take the pie out of the oven and let sit for about 10 min. to let it cool and let the filling thicken back up.
