1/2 c. Smart Balance Omega Plus Butter Spread
3/4 c. Nutra Sweet
3/4 c. Splenda
4 to 5 T. dark molasses
1 egg
1/2 tsp. vanilla
1 c. ground peanut, almond, cashew or other whole ground nut butter, with no added hydrogenated oils
1 c. flour (any whole grain flour or combination will do)
1/2 tsp. baking soda
1/2 tsp. double acting baking powder
1/2 tsp. salt
2 T. psylium seed hull powder
1/2 c. chopped nuts, optional
1/2 c. dried fruit, optional

Directions:
Directions:
Combine first 7 ingredients with mixer; set aside. Mix together remaining ingredients. Combine all ingredients slowly with spoon. The consistency should be that of a soft cookie dough, a bit heavy and pasty. This cookie dough is very oily and should not stick to your hands when rolling into balls before placing onto the baking sheets. Roll the mixture into 1 to 1-1/2 in. balls by hand. Place the balls on olive or canola oil coated baking sheets. Press flat with a fork in 2 orthogonal pressings. Bake at 375 degrees for 10 to 15 min. until golden brown. Yield: 20 cookies.
