1 1/2 c strong hot coffee
9 TBSP maple syrup
3 TBSP dark brown sugar, firmly packed
1/2 tsp instant espresso powder
1/3 c bourbon
9 TBSP unsalted butter, divided
salt & pepper
5 lbs sweet potatoes, peeled and cut into 2 1/2" cubes
3 TBSP olive oil
1/2 c chopped almonds, toasted

1) Stir in coffee, syrup, sugar and espresso powder in a medium saucepan over medium high heat until sugar dissolves. Bring mixture to a boil, cook until thickened and reduced by half, 6-7 minutes.
2) Remove syrup from heat, add bourbon and 2 TBSP butter. Reduce heat to medium and simmer until sauce is reduced to about 3/4 cup, 40-45 minutes. (Mixture should be thick enough to coat a spoon, can be made up to 2 days ahead.)
3) Preheat oven to 375. Arrange racks in upper and lower third of oven. Melt remaining 7 TBSP butter, put into large bowl. Add sweet potatoes and oil, season with salt and pepper. Divide potato mixture between 2 baking sheets and roast, turning potatoes often and rotating baking sheets until tender and start to turn golden brown and crisp around the edges, 30-35 minutes.
4) Transfer to serving platter and drizzle warm sauce over potatoes. Sprinkle with almonds.
