Lobster Mac and Cheese Recipe

Vegetable oil
1lb elbow macaroni
1quart milk
8 tbsp unsalted butter, divided
1/2 cup flour
12 ounces Gruyere cheese
8 oz extra sharp cheddar cheese
1/2 tsp black pepper
1/2 tsp nutmeg
1 1/2 lbs lobster meat
1 1/2 cups bread crumbs (I use panko)

Pre heat oven to 375º
Drizzle oil into a large pot of boiling water. Add pasta and cook according to package. Drain well.
Heat milk in a small saucepan, but don't boil it. In a large pot melt 6 tablespoons of butter and add flour. Cook over low heat for 2 minutes, stirring with a whisk. Still whisking, add the hot milk and cook for a minute or 2 more. Until thickened and smooth. Off the heat., add cheeses1 tbs. salt, the pepper, and nutmeg. Add the cooked pasta and lobster, stir well. Place mixture into 1 11x13 pan, or into 8 individual crocks.
Melt remaining butter and combine with bread crumbs. Sprinkle on to, bake 30 to 40 minutes until sauce is bubbly.

I play around with the cheeses, usually add not as much Gruyere, and more cheddar. Sometimes even velveeta. So yummy.
