Cajun Seasoning:

1 tsp garlic powder
1 tsp onion powder
1 tsp chili powder
1 tsp paprika
1/2 tsp pepper
1/2 cayenne pepper
1/4 tsp thyme

Red snapper fillets
Vegetable cooking oil

Directions:
Directions:
Cajun Seasoning: Measure first 7 ingredients into shallow soup bowl. Stir well to mix.

Heat heavy frying pan until very hot. A cast iron pan is best. Pat fillets dry with paper towel. Coat fillets with cooking oil then with seasoning. Place in hot frying pan that has been sprayed with no-stick cooking spray. Cook 2-3 minutes. Turn and cook 2-3 minutes more.

Makes 6 servings.
