1 tbsp extra virgin olive oil
3 large eggs
1/2 cup onions, diced
1/2 cup bell pepper, diced
1/2 cup broccoli, cut into small florets
1/2 cup carrots, diced
1 cup chicken breast or pork tenderloin, diced into cubes
1/2 cup frozen green peas
2 cups rice
1/4 cup soy sauce
green onions

Heat oil in a large skillet over medium high heat, add 3 lightly beaten eggs and gently stir until softly scrambled. Remove eggs from skillet, chop and set aside. In same skillet, add diced meat and cook until lightly brown and set aside.

Heat oil in skillet, add all of the vegetables, longest to cook first. Add rice and soy sauce. Stir fry 5 minutes or until thoroughly heated. Stir in scrambled eggs and sprinkle with sliced green onions.
