2 Tbsp extra virgin olive oil
salt and pepper
125 g smoked salmon, cut into strips
1 Tbsp. lemon juice
2/3 cup Greek low-fat yogurt
1 Tbsp capers, drained and chopped
2 Tbsp. chopped fresh dill
small sprigs of fresh dill to garnish
8 small roasting potatoes

Directions:
Preheat the oven to 400F. Scrub the potatoes and dry them with paper towel. Thread them onto metal skewers. This helps them to cook more quickly. Brush the skin of the potatoes with 1 tablespoon of the oil, then sprinkle with a little salt. Arrange on a baking tray and bake for 1 - 1 ¼ hours or until tender. Cut the potatoes in half lengthwise. Scoop out the flesh, leaving ½ inch layer. Cut in half lengthwise again. Brush with olive oil mixed with a little lemon juice. Season with salt and pepper. Return to oven and bake another 12- 15 minutes or until golden brown and crisp.
Combine the rest of the ingredients, and season to taste. Fill potato skins with salmon mixture and garnish with dill sprigs. Serve warm.
