1 medium sized eye of round roast sliced in to 1 inch pieces
10-12 carrots peeled and cut in half
4-6 small russet or yukon gold potatoes peeled and halved
2 medium sweet white onions, quartered
3 cans Campell's golden mushroom soup
1-2 cups flour

Directions:
Directions:
Heat 2 tbsp of oil in large skillet
Coat roast slices in flour and brown on all sides in skillet, about 2 minutes each side, and place in crock pot. Place onions in skillet with beef for about 2 minutes on each side of onion also. Layer beef, onions, potatoes, carrots and soup in crock pot. Cook on low for 8-10 hours.

You can also just brown the whole roast and put into the crock pot whole and slice after it comes out. We always serve with sourdough to dip in the gravy.
