100 g (4 oz) fine oatmeal
Pinch of salt
Good pinch of baking soda
1 tsp. bacon fat or drippings
Hot water

Directions:
Directions:
Place the oatmeal in a bowl with salt and soda. Melt the fat and add to the oatmeal with sufficient hot water to make a stiff paste. Knead the mixture into a smooth ball and roll out on an oatmeal-covered surface as thinly as possible, keeping the edges neat. Cut into a round then into 4 or 8 pieces. Place on a moderately hot griddle and cook slowly until the edge begin to curl up and the underneath is dry. Toast the other side under a moderate grill or place in a warm oven to dry out. Store in an airtight container. (If girdle is not available, use a strong frying pan.)

In a country home, fresh oatcakes were baked on the griddle every day. They were dried off on a metal rack or toaster which was hung by hooks onto the front of the kitchen fire. Oatcakes are known as "bread" (breid) or bannocks.
